Vegetable Dishes I Can't Live WithoutThe other day none of the other produce at the grocery store looked that great, so I was forced to buy broccoli. My husband, Lee,  loves it, but it’s not one of my favorite vegetables. In the hopes of jazzing it up, I turned to The Vegetable Dishes I Can’t Live Without by Molly Katzen (well-known author of The Moosewood Cookbook). Her recipe for Broccoli, Apples, & Red Onion in Honey-Mustard Marinade looked promising as my husband likes all 3 of those ingredients, although I’m sure he never envsioned eating them together in the same dish.

The recipe was straightforward and I think I had all the chopping and other prep work done by the time the water for the broccoli had boiled.

When I set the dish on the table, my husband said, “What’s this?” and I promptly renamed it Broccoli Salad (Lee likes salad too) . Miracle of miracles we both ended up liking it: The Dijon mustard in the vinaigrette made the broccoli palatable to me and yet was not overpowering enough to offend my husband’s palate. I think the dish might be even better the next day, perhaps mixed with leftover pasta to make a cold pasta salad.
